Filling

Mix cream, butter, and flour with a pastry fork until smooth. Divide into thirds, wrap, and chill for at least an hour.

Roll each third of dough separately, to 1/8" thick. Cut into circles with a shot glass. Dip in sugar to coat both sides and place on parchment-lined baking sheet. Prick each with fork several times.

Bake at 350°F for 8-9 minutes. Cool before frosting.

Cream filling ingredients together. Tint as desired with food coloring. Assemble sandwich cookies. Makes about 36 cookies.

Refrigerate finished cookies.
