Dough
- 3 c Flour, divided
- 1 tsp Salt
- 1/2 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 c Unsalted Butter, softened
- 1/2 c Shortening
- 2 Eggs
- 1 1/2 c Sugar
- 1/2 tsp Vanilla
- 1/2 tsp Almond Extract
Frosting
- 2 c Powdered Sugar
- 2 tbsp Heavy Cream
- 2 tbsp Unsalted Butter, softened
- 1 tsp Vanilla
Dough
Mix all but 3 tablespoons of flour with the other dry ingredients (for convenience, 3 cups of flour less 3 tbsp is 338 grams). Cut in fat.
In a large mixing bowl beat the eggs, sugar, and extracts. Add the flour and beat to combine. Divide the dough into 3 parts - wrap and chill.
Roll the dough 1/8 inch thick using the remaining 3 tablespoons of flour. Cut into desired shapes and bake at 350°F for 9 minutes.
Makes about six dozen cookies, depending on the size of the cookie cutters used.
Frosting
Cream the frosting ingredients together. Divide and add food coloring as desired before spreading on the cookies.

Notes
Mom's not sure if this came from Grandma Louise or Grandma Kitty. Mom uses salted butter and leaves out the teaspoon of salt.
