Ingredients
- 4 oz Thai Red Curry Paste
- 1 can Coconut Milk
- 1/2 c Water, from rinsing the coconut milk can
- 3/4 c Peanut Butter
- 3/4 c Brown Sugar
- 2 tbsp Apple Cider Vinegar
- 1/2 tbsp Salt
- 1 tbsp Thai Fish Sauce
Mix all ingredients in a sauce pan over low heat. Simmer, stirring constantly for 3-5 minutes.

Notes
Works well with chicken and most vegetables. We've done roasted sweet potatoes, broccoli, carrots, snap peas, spinach, and green beans. Friends suggest it's also good with zucchini or other squash.
