Ingredients
- 1 Zucchini Squash
- 1 Orange Pepper
- 1 Red Onion
- 3 Carrots
- 15 Grape Tomatoes
- 1/4 c Olive Oil
- 1 tbsp Italian Seasoning
- 1 1/2 lbs Bow Tie Pasta
- 1 c Parmesan Cheese
Preheat the oven to 400°.
Slice vegetables, and toss in olive oil and Italian seasoning. Bake, stirring the vegetables after the first ten minutes, until the onion begins to brown, about twenty minutes in total.
Meanwhile, boil the pasta according to its instructions. Strain, reserving one cup of liquid. Mix the pasta, liquid, and Parmesan cheese, then toss with the vegetables.
