Ingredients
- 1 c White Onion, chopped
- 1/2 c Green Pepper, chopped
- 8 cloves Garlic, minced
- 1 tbsp Butter
- 6 1/4 c Chicken Broth
- 4 Carrots, chopped
- 1/2 c Lentils
- 1 tbsp Italian Seasoning
- 1 tsp Salt
- 1/4 tsp Black Pepper
- 1 c Italian Sausage, cooked
- 1/2 c Barley
- 28 oz Crushed Tomatoes, undrained
In a soup pot, saute the onion, green pepper, and garlic in butter until tender (about 5 minutes).
Add the broth, carrots, lentils, barley, Italian seasoning, salt, and pepper. Bring to a boil, then cover, reduce heat, and simmer for 25 minutes.
Add the sausage. Cover and simmer for another 10-15 minutes or until the lentils and barley are tender.
Stir in tomatoes and let the mixture heat back up for a minute or so. Garnish with cheese if desired.

Notes
We used fresh parsley, thyme, sage, and rosemary and a bit of dried oregano in place of the italian seasoning.
